Cooking the Garden: Quinoa Stuffed Peppers

I was really excited about the number of peppers I had been growing on my small pepper plants.  Every week I would get one or two of these little peppers and eventually I started getting bigger bell peppers and decided to try this great stuffed pepper recipe I found here  via One Lovely Life Blog  . They were delicious and it just so happened that since we used quinoa instead of ground beef they were vegetarian.  I added a few of my own extra peppers and tomatoes that I had and skipped the enchilada sauce, they were delicious.  Definitely don't cook them much/any longer than it says though...you don't want your stuffed peppers get to soft!   What's your favorite summer recipe?  You only have a few weeks left to get to make it!    

Recent Projects

As you can see I have not been very wordy lately and that has mostly do to with the fact that I am currently apartment hunting and starting a new job. But here are some of the things that I've been doing while not having my life in upheaval. Made my 1st batch of pickles using my Grandma's recipe Trying out new recipes like this one from Allrecipes.com. Harvesting my garden to get ready to move.   And of course...being addicted to Pinterest! I promise I will be getting settled and be back in the writing rhythm soon!

National Chocolate Chip Cookie Day

Today is National Chocolate Chip Cookie Day!  So in order to celebrate I made chocolate chip cookies (of course).  But of course we couldn't just make any chocolate chip cookies we made chocolate chip cookies garden style...with zucchini!   I got the recipe from Right@Home and personally I think they're delicious!   All it takes is the following ingredients:  2 cups flour 1 teaspoon baking soda 2 sticks of butter 1/2 cup brown sugar 1/4 granulated sugar 1 teaspoon vanilla (which I forgot...oops) 2 eggs 2 cups shredded zucchini (this took one medium sized zucchini from the Farmers' Market) 1 cup old-fashioned oats 1/2 cup semi-sweet chocolate chips And of course you could always add chopped walnuts I just didn't because I'm sharing them with my coworkers.   I added more chocolate chips because they're CHOCOLATE CHIP cookies so obviously they should have more than just a few chips.   I had to add more flour because the first batch...

Julie & Julia

Today Megan (my cousin) took me to Julie & Julia (we got in free because she works there). It was a really good movie, which made me happy because I had heard some people hadn't liked it and thought it was a slow movie, but I loved it. If you haven't seen the movie the basic premise is that Julie (Powell, the author of the book the movie is based from) works her way through Julia (Childs, the world renowned cook) cookbook. She gives herself 365 days and there were 540-ish recipes in the cookbook. She then wrote a blog about it, which became really famous, she was offered book deals, etc. But the point of the movie was that she decided to do something, gave herself a deadline, accomplished it, and it changed her life. So, when I came home I was 1. Hungry (I can't watch food and not want to eat...its the reason I can't watch the food network) 2. Inspired...I decided to cook something...experimentally too. I made soup that I used canned chicken noodle soup and s...
